In a large pot, heat olive oil over medium heat. Add onion, garlic, carrot, and celery. Cook until vegetables are tender, about 5 minutes.

Add mushrooms and cook for another 3 minutes.

Add barley, lentils, vegetable broth, bay leaf, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until barley and lentils are cooked.

Remove bay leaf and thyme sprigs. Stir in fresh parsley.
