Preheat the oven to 350°F (175°C). Grease a baking dish.

In a large bowl, mash the ripe bananas.

Add rolled oats, almond butter, honey, vanilla extract, cinnamon, and salt. Mix well.

If desired, add chopped nuts, dried fruits, or dark chocolate chips.

Transfer the mixture to the greased baking dish and spread evenly.

Bake for 25 minutes or until golden brown.

Allow the bars to cool in the dish for 30 minutes.

Cut into bars and serve.
