This is vegan and gluten free recipe. Dish can be prepared in 40 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Preheat the oven to 325°F (163°C).

In a large mixing bowl, combine the rolled oats, shredded coconut, almonds, flaxseeds, chia seeds, cinnamon, and salt.

In a separate bowl, mash the ripe bananas. Add the maple syrup, coconut oil, and vanilla extract to the mashed bananas and mix well.

Pour the wet mixture over the dry ingredients and stir until everything is well coated.

Spread the mixture evenly onto a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy.

Remove from the oven and let it cool for 5 minutes.

Once cooled, stir in the dried cranberries.

Allow the granola to cool completely before storing it in an airtight container.

Serve with yogurt, milk, or enjoy as a snack.
