Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a small bowl, combine flaxseed meal and water. Let it sit for 5 minutes to form a flax egg.

In a large mixing bowl, whisk together the whole wheat flour, almond flour, baking powder, baking soda, cinnamon, and salt.

In another bowl, mix together the flax egg, coconut oil, maple syrup, almond milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Fold in the grated carrots, raisins, and chopped walnuts.

Divide the batter equally among the muffin cups.

Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
