Preheat the oven to 400°F (200°C).

Cut the acorn squash in half and remove the seeds.

Slice the squash into 1/2-inch thick slices.

In a bowl, mix together olive oil, maple syrup, cinnamon, salt, and black pepper.

Brush the mixture onto both sides of the squash slices.

Place the slices on a baking sheet and roast for 30-35 minutes, or until tender.

Remove from the oven and let rest for 5 minutes.
