Let the dough rest for 10 minutes to allow the cornmeal to fully hydrate.

Divide the dough into 8 equal portions and shape each portion into a ball.

Flatten each ball with your hands to form a disc, about 1/2 inch thick.

Heat a grill or non-stick pan over medium heat and brush it with vegetable oil.

Cook the arepas for about 5 minutes on each side, or until golden brown and crispy.

Once cooked, slice open each arepa horizontally, creating a pocket for the filling.
