Roasting vegetables brings out their natural sweetness and enhances their flavors.

Preheat the oven to 425°F (220°C).

Wash and peel the carrots and potatoes. Cut them into bite-sized pieces.

Wash and deseed the bell peppers. Cut them into strips.

Wash the zucchini and cut it into thick slices.

Peel and slice the red onion.

In a large bowl, combine all the vegetables with olive oil, salt, black pepper, and dried herbs. Toss well to coat.

Spread the vegetables in a single layer on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the vegetables are tender and slightly caramelized.

Remove from the oven and let them rest for 5 minutes.

Serve the roasted vegetables as a side dish or as a main course with bread or rice.
