Preheat the grill or panini press.

Brush olive oil on one side of each bread slice.

Layer the zucchini, eggplant, red bell pepper, red onion, mozzarella cheese, and basil leaves on the oiled side of two bread slices.

Drizzle balsamic vinegar on top of the vegetables.

Sprinkle salt and black pepper.

Place the remaining bread slices on top, oiled side facing up.

Grill the panini for about 5 minutes, or until the bread is toasted and the cheese is melted.
