Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

In a large mixing bowl, combine the peanut butter, coconut sugar, flaxseed meal, water, and vanilla extract. Mix well.

Add the almond flour, baking soda, and salt to the bowl. Stir until all the ingredients are fully combined.

Fold in the vegan chocolate chips.

Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Gently press down on each cookie with a fork to create a crisscross pattern.

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown.
