Spooky Eyeball Beans

Heat cooking oil in a large pot over medium heat.

Add chopped onion and minced garlic cloves. Sauté until onion becomes translucent.

Stir in paprika, cumin, salt, and black pepper.

Add cannellini beans, tomato sauce, and vegetable broth. Bring to a simmer.

Reduce heat to low and let it cook for 20 minutes, stirring occasionally.

While the beans are cooking, prepare the spooky eyeballs. Cut black olives in half and place a small piece of red or green bell pepper in the center of each half.

After 20 minutes, remove the pot from heat and let it cool slightly.

Use an immersion blender or transfer the mixture to a blender and blend until smooth.

Return the pot to low heat and add the spooky eyeballs. Cook for an additional 5 minutes.

Serve the spooky eyeball beans hot, garnished with fresh parsley.
