Moong Sprouts Dhokla

In a mixing bowl, combine moong sprouts, semolina, yogurt, ginger paste, green chili paste, lemon juice, turmeric powder, and salt.

Mix well to make a smooth batter.

Add water if needed to adjust the consistency.

Grease a dhokla plate or a steamer tray with oil.

Add eno fruit salt to the batter and mix gently.

Pour the batter into the greased plate or tray.

Steam for 15-20 minutes or until a toothpick inserted comes out clean.

Remove from the steamer and let it rest for 10 minutes.

In a small pan, heat oil and add mustard seeds.

Once the mustard seeds splutter, add curry leaves and sauté for a few seconds.

Pour this tempering over the steamed dhokla.

Garnish with fresh coriander leaves.

Cut into squares or diamond shapes.

Serve hot with green chutney or tamarind chutney.
