Preheat the oven to 325°F (160°C).

In a bowl, mix together the sugar, vanilla extract, cinnamon, nutmeg, and salt.

In a separate bowl, beat the egg white until frothy.

Add the mixed nuts to the frothy egg white and stir to coat.

Sprinkle the sugar and spice mixture over the nuts and toss to coat evenly.

Spread the nuts in a single layer on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring once halfway through, until the nuts are golden brown and crispy.

Remove from the oven and let the nuts cool for 5 minutes.
