Spicy potato & spinach soup
Potatoes are a great source of vitamin C and spinach is rich in iron.
This is vegan and gluten free recipe. Dish can be prepared in 45 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 12.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until fragrant.

Add cumin powder, coriander powder, red chili flakes, salt, and black pepper. Stir well.

Add diced potatoes and vegetable broth. Bring to a boil and simmer until potatoes are tender.

Add spinach and cook until wilted.

Remove from heat and let it rest for 5 minutes.

Blend the soup until smooth using an immersion blender or a regular blender.

Return the soup to the pot and reheat if necessary.

Stir in lemon juice.
