Peel and dice the sweet potato. Boil until tender, then mash.

In a large bowl, combine the mashed sweet potato, flour, sesame seeds, yeast, salt, olive oil, and water. Mix well until a dough forms.

Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rest for 30 minutes.

After the resting time, punch down the dough and shape it into a loaf.
