Dirty Rice – Vegetarian Style
Dirty rice is a traditional Cajun dish that gets its name from the ‘dirty’ appearance of the rice, which is colored by the spices and vegetables used in the recipe.

In a large pot, cook the rice in vegetable broth according to package instructions.

In a separate large skillet, heat vegetable oil over medium heat.

Add the chopped onion, bell pepper, celery, and garlic to the skillet. Cook until the vegetables are softened, about 5 minutes.

Stir in the dried thyme, paprika, cayenne pepper, salt, and black pepper. Cook for an additional 2 minutes.

Add the cooked rice to the skillet with the vegetables. Mix well to combine.

Cook the dirty rice for another 10-15 minutes, stirring occasionally, until it is heated through.

Remove from heat and let it rest for 5 minutes.

Garnish with chopped green onions and fresh parsley before serving.
