Zucchini-Falafel Pitas
Falafel is a popular Middle Eastern dish made from ground chickpeas or fava beans. It is often served in pita bread and is a staple street food in many countries.

Grate the zucchini and squeeze out the excess moisture.

In a food processor, combine the grated zucchini, chickpeas, onion, garlic, parsley, cumin, coriander, baking powder, chickpea flour, olive oil, salt, and black pepper. Pulse until well combined.

Shape the mixture into small patties and place on a baking sheet lined with parchment paper.

Bake in a preheated oven at 400°F (200°C) for 15 minutes, or until golden brown.

While the falafel is baking, warm the pita bread in the oven or on a stovetop.

To assemble the pitas, spread tahini sauce on each pita bread. Add lettuce, tomato, red onion, and 3-4 falafel patties.
