Rinse the lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat. Add chopped onion, carrot, celery, and minced garlic. Cook until vegetables are softened, about 5 minutes.

Add tomato paste, cumin, paprika, salt, and black pepper. Stir well to combine.

Add lentils and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until lentils are tender.

Remove bay leaves and stir in lemon juice.

Serve hot, garnished with fresh parsley. Enjoy!
