Quinoa is often referred to as a ‘superfood’ due to its high nutritional value and health benefits. It is a complete protein source, containing all nine essential amino acids.

This is vegan, gluten free and high protein recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

  1. Cook quinoa according to package instructions and set aside.
  2. Preheat the oven to 400°F (200°C).
  3. Cut the cauliflower into florets and steam until tender. Drain and set aside.
  4. In a food processor, combine the cooked quinoa, steamed cauliflower, chickpeas, onion, garlic, parsley, ground cumin, ground coriander, baking powder, salt, and black pepper. Pulse until well combined but still slightly chunky.
  5. Shape the mixture into meatballs and place them on a baking sheet.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  7. While the meatballs are baking, prepare the tahini sauce by whisking together tahini, lemon juice, water, and olive oil in a small bowl.
  8. Serve the vegetarian meatballs with the tahini sauce on the side.
