Zucchini Kofte with Beet-Bulgur Pilaf

Grate the zucchini and squeeze out excess moisture.

Finely chop the onion, garlic, and parsley.

In a large bowl, combine the grated zucchini, chopped onion, garlic, parsley, breadcrumbs, ground flaxseed, ground cumin, ground coriander, salt, and black pepper. Mix well.

Shape the mixture into small patties.

Heat olive oil in a frying pan over medium heat. Fry the zucchini kofte until golden brown on both sides.

Preheat the oven to 180°C (350°F).

Transfer the fried kofte to a baking dish and bake for 10 minutes.

Meanwhile, cook the beet-bulgur pilaf. Grate the beet and set aside.

In a saucepan, heat olive oil and sauté the grated beet for 2 minutes.

Add bulgur and vegetable broth to the saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes or until the bulgur is cooked.

Remove from heat and stir in lemon juice and fresh mint leaves.
