In a large pot, heat olive oil over medium heat. Add chopped onions and minced garlic. Saute until onions are translucent.

Add broccoli florets and vegetable stock to the pot. Bring it to a boil and let it simmer for 10-15 minutes until the broccoli is tender.

Remove from heat and let it cool slightly. Use an immersion blender to puree the soup until smooth.

Return the pot to low heat and stir in coconut milk, lemon juice, salt, and black pepper. Cook for another 5 minutes.

Serve hot and garnish with a sprinkle of black pepper and a drizzle of olive oil.
