Wild rice is not actually rice, but a type of aquatic grass seed.

Rinse the wild rice under cold water.

In a large saucepan, heat the olive oil over medium heat.

Add the onion, garlic, carrot, and celery. Sauté until the vegetables are tender.

Add the wild rice, thyme, salt, and pepper. Stir to combine.

Pour in the vegetable broth and bring to a boil.

Reduce heat to low, cover, and simmer for 40 minutes or until the rice is tender and liquid is absorbed.

Remove from heat and let it rest for 5 minutes.

Fluff the rice with a fork and stir in the parsley and lemon juice.
