Roast in the oven for 30 minutes, or until the squash is tender and slightly caramelized.

Remove the squash from the oven and let it cool for a few minutes.

Scoop out the flesh from the squash and transfer it to a food processor or blender.

Add Greek yogurt and maple syrup to the processor and blend until smooth and creamy.
