Wheat berries are the whole, unprocessed kernels of wheat, containing the bran, germ, and endosperm. They are a good source of fiber and nutrients.

  1. Cook the wheat berries according to package instructions. Drain and set aside.
  2. Preheat the oven to 400°F (200°C).
  3. Peel and cut the winter squash into 1-inch cubes.
  4. Toss the winter squash cubes with 1 tablespoon of olive oil, ground cumin, ground coriander, cayenne pepper, salt, and black pepper.
  5. Spread the seasoned winter squash cubes on a baking sheet and roast in the preheated oven for 25-30 minutes, or until tender.
  6. While the winter squash is roasting, heat 1 tablespoon of olive oil in a large skillet over medium heat.
  7. Add the chopped red onion and minced garlic cloves to the skillet and sauté until the onion is translucent.
  8. Add the cooked wheat berries, chickpeas, and roasted winter squash to the skillet. Stir well to combine.
  9. Cook for an additional 5 minutes, or until heated through.
  10. Remove from heat and stir in fresh parsley and lemon juice.
  11. Let the dish rest for 5 minutes before serving.
  12. Serve warm and enjoy!
