Watercress Soup

Watercress is known as a superfood due to its high nutrient content, including vitamins A, C, and K, as well as calcium and iron.

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.

Add potato, vegetable stock, and watercress. Bring to a boil and simmer for 15 minutes until the potato is cooked.

Remove from heat and let it cool for a few minutes.

Use an immersion blender or a regular blender to blend the soup until smooth.

Return the soup to the pot and reheat over low heat. Season with salt, black pepper, and lemon juice.

Serve the soup hot, topped with a dollop of Greek yogurt.
