  1. Preheat the oven to 400°F (200°C).
  2. Peel and slice the beets into 1/4-inch thick slices.
  3. In a bowl, mix together the orange juice, lemon juice, ginger, honey, olive oil, salt, and black pepper.
  4. Place the beet slices in a baking dish and pour the marinade over them.
  5. Cover the baking dish with foil and bake in the preheated oven for 40 minutes.
  6. Remove the foil and continue baking for an additional 5 minutes.
  7. Allow the beets to rest for 10 minutes before serving.
  8. Garnish with fresh parsley before serving.
