Preheat the oven to 325°F (163°C).

In a large mixing bowl, combine rolled oats, almonds, cashews, pumpkin seeds, flaxseeds, chia seeds, ground ginger, ground cinnamon, ground nutmeg, and salt.

In a small saucepan, melt coconut oil over low heat. Remove from heat and stir in maple syrup and vanilla extract.

Pour the liquid mixture over the dry ingredients and mix until well combined.

Spread the mixture evenly on a lined baking sheet.

Bake for 20-25 minutes, stirring halfway through, until golden brown.

Remove from the oven and let it cool completely.

Once cooled, mix in dried cranberries and dried apricots.
