Drain and rinse the chickpeas.

Dice the red bell pepper, cucumber, and red onion.

Grate the fresh ginger.

In a large skillet, heat the olive oil over medium heat.

Add the diced red bell pepper, cucumber, and red onion to the skillet and stir-fry for 5 minutes.

Add the grated ginger, drained chickpeas, salt, and black pepper to the skillet and stir-fry for another 5 minutes.

Remove from heat and stir in the lemon juice.

Garnish with fresh cilantro.
