Sweet Potato and Chickpea Curry
Sweet potatoes are an excellent source of vitamin A and a good source of vitamin C, fiber, and potassium.

Heat oil in a large pan over medium heat. Add onion, garlic, and ginger. Cook until onions are translucent.

Add curry powder, turmeric, cumin, and cayenne pepper. Stir for 1 minute.

Add sweet potatoes, chickpeas, coconut milk, and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

Stir in lime juice, cilantro, salt, and black pepper. Cook for an additional 5 minutes.

Serve hot with rice or naan bread.
