In a saucepan, bring water, olive oil, lemon juice, salt, and black pepper to a boil.

Add couscous to the boiling mixture, cover the saucepan, and remove from heat. Let it rest for 5 minutes.

Fluff the couscous with a fork and transfer it to a serving bowl.

Add dried cherries, parsley, and almonds to the couscous. Mix well.

Serve the couscous with dried cherries warm or at room temperature.
