In a large pot, heat some oil and sauté the onion, garlic, and ginger until fragrant.

Add the cauliflower florets and spices (cumin, coriander, turmeric) and cook for a few minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for 15-20 minutes until the cauliflower is tender.

Use an immersion blender or transfer the soup to a blender and blend until smooth.

Return the soup to the pot and stir in the coconut milk, lime juice, salt, and black pepper.
