  1. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Rinse the quinoa under cold water and cook according to package instructions. Once cooked, let it cool.
  3. In a large bowl, combine the cooked quinoa, coconut flour, cocoa powder, coconut sugar, baking powder, and salt.
  4. In a separate bowl, mix together the melted coconut oil, almond milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until well combined.
  6. Fold in the dark chocolate chips.
  7. Using a tablespoon, scoop the mixture onto the prepared baking tray, shaping them into bite-sized balls.
  8. Bake for 20 minutes or until the edges are slightly golden.
  9. Remove from the oven and let them cool for 30 minutes.
