  2. In a large bowl, combine the rolled oats, almonds, dried apricots, honey, coconut oil, vanilla extract, and salt. Mix well.
  3. Line a baking dish with parchment paper and press the mixture into the dish, ensuring it is evenly spread.
  4. Bake for 20-25 minutes or until the edges are golden brown.
  5. Remove from the oven and let it cool in the dish for 10 minutes.
  6. Lift the parchment paper to remove the granola bar from the dish and transfer it to a wire rack to cool completely.
  7. Once cooled, cut into bars and enjoy!
