  1. Preheat the oven to 180°C (350°F).
  2. Slice the eggplant, zucchini, red bell pepper, and onion into thin strips.
  3. Saute the garlic cloves in olive oil until fragrant.
  4. In a baking dish, layer the vegetables and herbs, seasoning each layer with salt and black pepper.
  5. In a saucepan, heat the vegetable broth and add agar agar powder. Stir until dissolved.
  6. Pour the broth mixture over the layered vegetables.
  7. Cover the baking dish with foil and bake for 45 minutes.
  8. Remove the foil and bake for another 15 minutes until the top is golden.
  9. Allow the terrine to cool for 10 minutes, then refrigerate for at least 2 hours.
  10. Serve chilled and enjoy!
