Vegetarian African Peanut Soup

In a large pot, heat some oil over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant.

Add the carrot and sweet potato, and cook for a few minutes.

Stir in the peanut butter, curry powder, cayenne pepper, salt, and black pepper.

Add the vegetable stock and canned diced tomatoes. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until the vegetables are tender.

Stir in the coconut milk and cook for another 5 minutes.

Remove from heat and let the soup rest for 5 minutes.

Serve the soup hot, garnished with fresh cilantro and a squeeze of lime juice.
