  2. In a large bowl, crumble the tofu and add the mixed nuts, breadcrumbs, chopped onion, minced garlic, grated carrot, chopped red bell pepper, and fresh parsley. Mix well.
  3. In a small bowl, whisk together the beaten egg, soy sauce, olive oil, salt, and black pepper. Pour the mixture into the large bowl with the tofu and nut mixture. Stir until everything is well combined.
  4. Transfer the mixture to the greased loaf pan and press it down firmly.
  5. Bake in the preheated oven for 45 minutes, or until the loaf is firm and golden brown.
  6. Remove from the oven and let it rest for 10 minutes before slicing and serving.
