Heat vegetable oil in a large pan over medium heat. Add chopped onion, minced garlic, and grated ginger. Saute until fragrant.

Add curry powder, turmeric powder, cumin powder, coriander powder, and cayenne pepper. Stir well.

Add diced potatoes, sliced carrots, bell pepper, and cauliflower florets. Cook for 5 minutes.

Pour in coconut milk and chopped tomatoes. Season with salt. Simmer for 20 minutes or until vegetables are tender.

Garnish with fresh cilantro. Serve hot with rice or naan bread.
