Vegetable Burgers
The concept of a veggie burger dates back to ancient India, where vegetarianism has been practiced for centuries.

Drain and rinse the chickpeas. In a food processor, combine the chickpeas, carrots, zucchini, red onion, garlic cloves, fresh parsley, ground cumin, ground coriander, bread crumbs, salt, and black pepper. Pulse until well combined but still slightly chunky.

Form the mixture into 4 patties and refrigerate for 10 minutes.

Heat olive oil in a pan over medium heat. Cook the patties for 4-5 minutes on each side until golden brown.

Toast the burger buns.

Assemble the burgers by placing a patty on the bottom half of each bun. Top with lettuce leaves, tomato slices, onion slices, and pickles. Cover with the top half of the bun.
