Black-eyed peas are considered a symbol of good luck and prosperity in many cultures, especially when eaten on New Year’s Day.

  1. Rinse and soak the black-eyed peas overnight.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion, minced garlic, carrots, and celery. Cook until vegetables are tender.
  4. Add drained black-eyed peas, vegetable broth, canned tomatoes, potatoes, bay leaves, thyme, paprika, salt, and black pepper.
  5. Bring the soup to a boil, then reduce heat to low and simmer for 30 minutes.
  6. Remove bay leaves and garnish with fresh parsley.
  7. Serve hot and enjoy!
