  1. In a large mixing bowl, combine buckwheat flour, tapioca starch, chia seeds, baking powder, and salt.
  2. In a separate bowl, mix warm water, apple cider vinegar, maple syrup, and olive oil.
  3. Pour the wet ingredients into the dry ingredients and mix well until a thick batter forms.
  4. Grease a loaf pan and pour the batter into it. Smooth the top with a spatula.
  5. Sprinkle sesame seeds on top of the batter.
  6. Preheat the oven to 350°F (175°C) and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
