Preheat the oven to 350°F (175°C).

In a large mixing bowl, combine the whole wheat flour, vanilla protein powder, baking powder, chai spice mix, cinnamon, and salt.

In a separate bowl, whisk together the almond milk, maple syrup, coconut oil, vanilla extract, and apple cider vinegar.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Fold in the chopped walnuts.

Divide the batter evenly into a greased muffin tin.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
