Preheat the oven to 180°C (350°F).

Peel and grate the sweet potato.

In a large bowl, combine the grated sweet potato, black sesame seeds, all-purpose flour, baking powder, salt, and cinnamon.

In a separate bowl, whisk together the coconut oil, maple syrup, almond milk, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Divide the batter evenly among a greased muffin tin.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 10 minutes before transferring them to a wire rack to cool completely.
