Biscotti is an Italian twice-baked cookie that was originally created as a long-lasting food for travelers.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a large bowl, combine the okara, almond flour, coconut sugar, baking powder, vanilla extract, and almond milk. Mix well until a dough forms.

Fold in the dried cranberries and chopped almonds.

Shape the dough into a log and place it on the prepared baking sheet. Flatten the log slightly with your hands.

Bake for 20-25 minutes, or until golden brown and firm to the touch.

Remove from the oven and let it cool for 10 minutes.

Carefully slice the log into biscotti shapes, about 1/2 inch thick.

Place the biscotti back on the baking sheet and bake for an additional 5 minutes on each side, or until crispy.
