Preheat the oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.

Add mushrooms and cook until they release their moisture.

Add spinach and cook until wilted. Remove from heat and set aside.

In a mixing bowl, whisk together almond milk, chickpea flour, nutritional yeast, turmeric, black salt, salt, and black pepper.

Add the cooked vegetables to the mixture and stir well.

Pour the mixture into the frozen pie crust.

Bake in the preheated oven for 40 minutes or until the quiche is set and golden brown.

Allow the quiche to rest for 10 minutes before serving.
