Vegan Roasted Tomato Soup
Tomatoes are actually a fruit, but they are commonly referred to as a vegetable in cooking.
This is vegan and gluten free recipe. Dish can be prepared in 50 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 10.

Preheat the oven to 400°F (200°C).

Cut the tomatoes in half and place them on a baking sheet.

Drizzle with olive oil, salt, and black pepper.

Roast in the oven for 30 minutes until the tomatoes are soft and slightly caramelized.

In a large pot, heat olive oil over medium heat.

Add chopped onion and minced garlic. Sauté until translucent.

Add roasted tomatoes, vegetable broth, balsamic vinegar, dried basil, salt, and black pepper.

Bring to a boil, then reduce heat and simmer for 10 minutes.

Use an immersion blender to puree the soup until smooth.

Serve hot, garnished with fresh basil leaves.
