Preheat the oven to 325°F (163°C).

In a large mixing bowl, combine rolled oats, walnuts, dried cranberries, cinnamon, and salt.

In a small saucepan, heat the maple syrup, coconut oil, and vanilla extract over low heat until melted.

Pour the liquid mixture over the dry ingredients and stir until well combined.

Spread the mixture evenly on a baking sheet lined with parchment paper.

Bake for 20-25 minutes, stirring halfway through, until golden brown.
