  2. In a small bowl, combine the flaxseed meal and water. Let it sit for 5 minutes to thicken.
  3. In a large mixing bowl, cream together the coconut oil, maple syrup, and vanilla extract.
  4. Add the flaxseed mixture to the bowl and mix well.
  5. In a separate bowl, combine the almond flour, rolled oats, brewer's yeast, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
  7. Fold in the dried cranberries and vegan chocolate chips.
  8. Scoop tablespoon-sized portions of dough onto the prepared baking sheet.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
