Vegan Double Chocolate Kahlua Cookies
Kahlua is a coffee liqueur from Mexico and adds a rich flavor to these vegan double chocolate cookies.

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a medium bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

In a separate large bowl, cream together the vegan butter, granulated sugar, and brown sugar until light and fluffy.

In a small bowl, mix together the flaxseed meal and water. Let it sit for 5 minutes to thicken.

Add the flaxseed mixture, vanilla extract, and Kahlua liqueur to the creamed butter and sugar. Mix well.

Gradually add the dry ingredients to the wet ingredients and mix until just combined.

Fold in the vegan chocolate chips.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set and the centers are slightly soft.

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
