Preheat the oven to 350°F (175°C).

In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.

In a separate bowl, mix together the coconut oil, maple syrup, almond milk, vanilla extract, and apple cider vinegar.

Gradually add the wet ingredients to the dry ingredients and mix until well combined.

Fold in the vegan chocolate chips.

Line a muffin tin with cupcake liners and fill each liner about 3/4 full with the batter.

Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

Remove from the oven and let the cupcakes cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Once cooled, frost the cupcakes with your favorite vegan frosting. Enjoy!
