Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

In a microwave-safe bowl, melt the vegan dark chocolate chips and coconut oil together, stirring until smooth.

In a separate bowl, whisk together the carob powder, farina flour, almond flour, baking powder, and salt.

Add the melted chocolate mixture, maple syrup, and vanilla extract to the dry ingredients. Stir until well combined.

Fold in the chopped nuts.

Scoop tablespoon-sized portions of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Bake for 10-12 minutes, or until the edges are set.
