  1. Heat vegetable oil in a large pot over medium heat. Add onion, garlic, carrots, celery, and mushrooms. Cook until vegetables are tender.
  2. Sprinkle flour over the vegetables and stir well to coat. Cook for 1-2 minutes.
  3. Slowly pour in vegetable broth while stirring continuously. Add soy sauce, poultry seasoning, and bay leaves. Bring to a simmer and cook for 10 minutes.
  4. Add frozen vegan chicken strips, peas, parsley, salt, and black pepper. Simmer for another 10 minutes.
  5. While the stew is simmering, prepare the vegan biscuit dough according to package instructions.
  6. Drop spoonfuls of the biscuit dough onto the simmering stew. Cover and cook for 15 minutes or until the dumplings are cooked through.
  7. Serve hot and enjoy!
